Heavenly Banana Walnut Cream Cake
Ingredients:
2 ripe bananas, mashed
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1/2 cup sour cream
1 teaspoon vanilla extract
1/2 cup chopped walnuts
For the Cream Frosting:
1 1/2 cups heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup chopped walnuts (for topping)
Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a medium bowl, whisk together flour, baking soda, and salt.
In a separate large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition.
Stir in the mashed bananas, sour cream, and vanilla extract.
Gradually add the dry ingredients to the wet mixture and mix until just combined. Fold in the chopped walnuts.
Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool completely before frosting.
To make the frosting, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
Frost the cooled cake with the whipped cream mixture and sprinkle with chopped walnuts.
