Stuffed Acorn Squash
Ingredients:
2 acorn squash
1 pound ground beef or turkey
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1/2 cup celery, finely chopped
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon sage
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1 egg, beaten
1 cup chicken broth
Directions:
Preheat oven to 400°F (200°C).
Cut each squash in half horizontally; scoop out and discard seeds. Place squash halves, cut side up, on a baking sheet.
In a large skillet over medium heat, heat olive oil and cook onion and garlic until translucent. Add ground beef or turkey and cook until browned.
Mix in breadcrumbs, celery, salt, pepper, sage, cloves, and cinnamon. Cook for another 2-3 minutes.
Remove from heat, stir in the beaten egg and half of the chicken broth.
Generously stuff each acorn squash half with the meat mixture.
Pour remaining chicken broth over the stuffed squash.
Cover with aluminum foil and bake for 1 hour 15 minutes in the preheated oven, or until squash is tender.
