Easy Fried Rice
Ingredients:
2 cups cold cooked jasmine rice
1/2 cup finely chopped carrots
1/2 cup frozen peas, thawed
1/2 cup finely chopped onion
2 large eggs, beaten
2 tablespoons vegetable oil
2 tablespoons soy sauce
1/2 teaspoon sesame oil
2 green onions, finely sliced
Salt and pepper to taste
Directions:
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the carrots and onions, and sauté for 2-3 minutes until the onions become translucent.
Push the vegetables to one side and pour the beaten eggs into the opposite side. Allow eggs to sit for a few seconds until they start to set, then scramble them until fully cooked.
Add the cold rice to the skillet or wok. Pour the soy sauce and sesame oil over the rice. Stir fry for 3-4 minutes to combine all ingredients and cook rice until it is just crispy.
Stir in the green onions and peas, and continue to fry for another minute.
Season with salt and pepper to taste.
Serve hot.
