Cinnamon Sugar French Toast Muffins
Ingredients:
6 slices of bread (white or whole wheat), cubed
4 large eggs
1 cup milk
1/2 cup granulated sugar
1 tablespoon vanilla extract
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1/4 cup brown sugar (for topping)
1 tablespoon ground cinnamon (for topping)
Powdered sugar (for dusting, optional)
Directions:
Preheat your oven to 350°F (175°C) and grease a muffin tin.
In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
Add the cubed bread to the mixture and gently stir until all the bread is soaked. Let it sit for about 10 minutes.
Spoon the bread mixture into the greased muffin cups, filling each about 3/4 full.
In a separate small bowl, mix together the brown sugar and cinnamon for the topping. Sprinkle this mixture evenly over the muffins.
Drizzle the melted butter over the top of the muffins.
Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
Let cool for a few minutes before removing from the muffin tin. Dust with powdered sugar if desired before serving.
