Old-Fashioned Italian Zucchini Fritters
Ingredients:
3 cups grated zucchini
1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
2 large eggs, beaten
Salt and freshly ground black pepper, to taste
1/4 cup fresh basil leaves, finely chopped
Olive oil, for frying
Directions:
In a mixing bowl, combine the grated zucchini with a pinch of salt. Let it sit for about 10 minutes, then squeeze out the excess moisture using a clean kitchen towel.
Add the flour, Parmesan cheese, minced garlic, beaten eggs, black pepper, and chopped basil to the zucchini. Mix well until all ingredients are thoroughly combined.
Heat olive oil in a large skillet over medium heat.
Once hot, drop spoonfuls of the zucchini batter into the skillet, flattening them slightly with the back of the spoon.
Fry each side for 2-3 minutes or until golden brown.
Place the cooked fritters on a plate lined with paper towels to drain any excess oil.
Serve warm with a side of marinara sauce or a dipping sauce of your choice.
