Lemon Drizzle Cake
Ingredients:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
2 large eggs
1/2 cup milk
1/2 cup unsalted butter, melted
1 tablespoon lemon zest
2 tablespoons lemon juice
1/2 cup powdered sugar (for glaze)
3 tablespoons lemon juice (for glaze)
Directions:
Preheat oven to 350°F (175°C).
In a medium-sized mixing bowl, whisk together flour, baking powder, and salt.
In another bowl, beat the granulated sugar, eggs, milk, melted butter, lemon zest, and lemon juice until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into a greased loaf pan.
Bake for 45-50 minutes or until a toothpick inserted into the center of the cake comes out clean.
While the cake is baking, whisk together the powdered sugar and 3 tablespoons of lemon juice to make the glaze.
Once the cake is done and slightly cooled, drizzle the glaze over the top.
