Amazingly Tasty and Crispy Chicken Schnitzel
Ingredients:
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 eggs, beaten
2 cups breadcrumbs
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
Vegetable oil, for frying
Lemon wedges, for serving
Directions:
Place the chicken breasts between two sheets of plastic wrap. Using a meat mallet or the bottom of a heavy pan, pound them until they are 1/4 inch thick.
In three separate shallow dishes, set out the flour, beaten eggs, and breadcrumbs.
Season the breadcrumbs with salt, pepper, garlic powder, and onion powder. Mix well.
Dredge each chicken breast first in the flour, then dip into the egg mixture, and finally coat with the seasoned breadcrumbs, pressing them onto the chicken to adhere.
Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken pieces without crowding the pan.
Fry each side for about 3-4 minutes or until golden brown and crispy.
Transfer the fried chicken to a plate lined with paper towels to drain excess oil.
Serve hot with lemon wedges on the side.
